Today was a huge success, in terms of my “to do” list. I got the stuff done at work on time.
I found my necklace! It was tangled in a bunch of bracelets in my large jewelry box. Turns out I was responsible after all!
Scott came home just in time for us to change and hit the gym. I really enjoy working out with him because he is a huge fan of free-weights and helps me learn some “guy” type moves, We started with a 10 min run, focused on bi’s and tri’s for weights, then wrapped up with abs and stretching. It was a good session! I polished off the to do list by watering the flowers when we got home.
Later, I caught up on my Google Reader subscriptions and immediately felt inspired by Courtney’s post about easy buffalo chicken wraps. The idea sounded so good, I couldn’t help but raid my fridge and make some of my own. I used chicken and shrimp because I didn’t have enough of one or the other to use alone.
Buffalo Chicken & Shrimp Wraps
1 chicken breast
1/4 cup (or more, I used what was left in the bag) small cooked shrimp, thawed if frozen
1/2 red bell pepper, diced
5 med celery stalks, diced
2 tbsp Frank’s Red Hot Buffalo Wing Sauce (pick your fave flavor)
2 whole wheat wraps (such as Ortega)
Spray large skillet pan with nonstick spray and add the chicken breast (cut smaller to speed cooking) to cook over medium heat. Just before the chicken is done cooking, add in the shrimp to the pan to cook with the chicken.
While chicken & shrimp is finishing up, dice red bell pepper half and celery into small pieces.
Once chicken is fully cooked, remove from heat and shred with fork (I actually use two).
Return chicken & shrimp to pan, add celery & bell pepper. Add two tablespoons of your favorite buffalo wing sauce.
Turn heat back on to medium and stir to coat all components with buffalo wing sauce. Cook for 1-2 min to seal in flavor.
Remove from heat. Place whole wheat wraps on plate covered with a paper towel and microwave for 15 sec (optional). Spoon buffalo mixture onto wrap and top with small amount of ranch or blue cheese dressing. Wrap it up and enjoy with your favorite side dish! Makes 2 servings.
The wrap was a little spicy with that flavor (I’ll be downing some Tums before bed), but it was totally delicious and will likely be a hit with your guy (or girl? Any male readers?) if they looooove buffalo wings.
