Buffalo Inspiration

Today was a huge success, in terms of my “to do” list.  I got the stuff done at work on time.

I found my necklace!  It was tangled in a bunch of bracelets in my large jewelry box.  Turns out I was responsible after all!

Scott came home just in time for us to change and hit the gym.  I really enjoy working out with him because he is a huge fan of free-weights and helps me learn some “guy” type moves,  We started with a 10 min run, focused on bi’s and tri’s for weights, then wrapped up with abs and stretching.  It was a good session!  I polished off the to do list by watering the flowers when we got home.

Later, I caught up on my Google Reader subscriptions and immediately felt inspired by Courtney’s post about easy buffalo chicken wraps.  The idea sounded so good, I couldn’t help but raid my fridge and make some of my own.  I used chicken and shrimp because I didn’t have enough of one or the other to use alone.

Buffalo Chicken & Shrimp Wraps

1 chicken breast
1/4 cup (or more, I used what was left in the bag) small cooked shrimp, thawed if frozen
1/2 red bell pepper, diced
5 med celery stalks, diced
2 tbsp Frank’s Red Hot Buffalo Wing Sauce (pick your fave flavor)
2 whole wheat wraps (such as Ortega)

Spray large skillet pan with nonstick spray and add the chicken breast (cut smaller to speed cooking) to cook over medium heat.  Just before the chicken is done cooking, add in the shrimp to the pan to cook with the chicken.

While chicken & shrimp is finishing up, dice red bell pepper half and celery into small pieces.

Once chicken is fully cooked, remove from heat and shred with fork (I actually use two).

Return chicken & shrimp to pan, add celery & bell pepper.  Add two tablespoons of your favorite buffalo wing sauce.

Turn heat back on to medium and stir to coat all components with buffalo wing sauce.  Cook for 1-2 min to seal in flavor.

Remove from heat.  Place whole wheat wraps on plate covered with a paper towel and microwave for 15 sec (optional).  Spoon buffalo mixture onto wrap and top with small amount of ranch or blue cheese dressing.  Wrap it up and enjoy with your favorite side dish!  Makes 2 servings.

The wrap was a little spicy with that flavor (I’ll be downing some Tums before bed), but it was totally delicious and will likely be a hit with your guy (or girl?  Any male readers?) if they looooove buffalo wings.

Today Feels Like Monday

Dinner last night started out with just pasta & creamy pesto sauce.

Snooze, right?  I also recognize that sauce mix is not really healthy (although I did use skim milk), but I have yet to take a stab at making my own sauce.  It’s on the list.  Here’s how you improve an otherwise boring (and not terribly healthy) dinner:

I chopped up 5 spears of asparagus, 1/2 of a red bell pepper, a cup of grape tomatoes, and threw them in a pan coated with nonstick spray.  I also added a dash of garlic powder and let them saute while the pasta boiled.  After the sauce cooked, I combined everything together.  Final product shot!

The veggies definitely added something more to the dish, and I was happy to be a little creative in the kitchen.  Scott might’ve liked it as well.  ;)

I kicked today off with an iced coffee and a bagel w/ 1/3 fat strawberry cream cheese.

The iced coffee was completely necessary.  It’s just too hot for a regular one today.  Sidenote: I don’t work for PNC, my friend works there and gave me the cup.  :)

I am taking forever to get going this morning.  I think the long weekend threw me off-track a little and I definitely have things I need to get done.  Today’s to do list involves:

  • Run samples from 3 different studies
  • Hit the gym for a 30 min run & weights after work
  • Find my missing necklace :(
  • Water the yard/flowers

Memorial Weekend – Part 2

Yesterday was one of the best beach days I have had in a long time.  We originally planned to head to a drive-on beach with some friends of mine, but we decided to get some family time in and instead met up with my sister Molly and her hubs Josh in Bethany Beach.  The sun was shining, there was a slight breeze on the beach, and my toes were in the sand.  Perfection.  Scott and I cracked open the growler of Victory Golden Monkey that we’d been saving for such a day.

The beer was a hit with Molly & Josh.  A little later on, Scott and Josh left to go refill the brews and ended up coming back with some pizza.

Totally hit the spot.

After some serious hours in the sun (I burned, SO mad at myself for that.  I haven’t burned in ages and I’m normally a sunscreen psycho, ugh), we went back with Molly & Josh to shower off and the boys left to go get some grilling supplies.  We had a BBQ with burgers, kabobs, hot dogs, & beans.  We were stuffed, the food was so good.  Scott finally got to meet my sister’s other handsome man, Bailey.

He wouldn’t look at the camera!  He’s a great dane/lab/pit/other stuff mix and he’s quite the sweetie pie. 

We left shortly after dinner and I am so glad we did.  The temperature is WAY too hot today to be sitting in all the beach traffic.  Instead, we woke up and got iced coffee at Wawa.  I selected a fiesta turkey wrap and Baked Lays as my “brunch.”

Gooey goodness.  I spent the next few hours watering the grass & flowers, clipping coupons, reading some magazines, and catching up on blogs.  Once that was complete, I ventured over to Giant and saw my “new” gym is definitely open for business.  It looks much more open and is way more convenient than the other Planet Fitness I visit.

I did some serious shopping and spent about $132.  This is what that much in groceries looks like (I did save a lot, I swear!):

Some things I won’t need to buy now for a couple weeks.  I’m trying to be better about groceries since that seems to be what I spend a lot on.  But, now we’re fully stocked for a good, healthy week ahead!

The rest of the day I plan to whip together some dinner and do some light cleaning around the house.  Hope everyone enjoyed the rest of their weekend and stayed safe in this crazy heat!
