Monday I was determined to flex my baking muscles and try out a recipe posted earlier that day from the ever-so-lovely Courtney.  The task at hand:  Orange Cream Soda Pop Cupcakes.  I only made a few tweaks to her recipe.  I used 1 cup of liquid egg whites instead of the egg/egg sub mixture.  I also used only 3 cups of confectioners’ sugar instead of the 4-5.  On with the pics!

I was able to make 2 dozen normal sized cupcakes and about 14 mini cupcakes.  I packed the babies up in one of the new boxes I ordered from BRPBoxShop and brought them into work yesterday.

Can you tell I like bright colors?  The cupcakes were a smash at work.  One guy told me he normally is not a cupcake person and ate 3 of them.  Someone else said they had 3 and asked today if I had more.  And one other person had multiples.  Say what?  I’d like to give a special thanks to Courtney for having the most amazing recipes to share with the blogosphere.  She has a ton more I am dying to try, so future reviews/tests (my coworkers thank you, C)!  I’d also like to point out my decorating skills are nowhere near hers right now; this was my first time using the piping utensils.

They went perfectly with my morning coffee.  And they really do taste like an orange creamsicle!  ;)

    • I am trying to find good boxes for shipping cupcakes as I imagine it can be done. If that works out, perhaps some treats will find their way to you in the future. ;)

  2. Those cupcakes look great! I thought they were so cute when I saw on them Courtney’s blog. I think you did an awesome job decorating them! I really want to try making them! :)
